Scarterran ice cream would probably be considered a bit bland compared to modern Earth ice cream, but it would have blown the taste buds of most Medieval Earth humans.   Ice cream in Scarterra has many names based on how the locals make it. The picture above is "Fumayan Apple Snow" and depicts a very large portion, roughly triple a normal portion.

YEAH! Ice cream can be made with of cows' milk or goats' milk. Anything with an udder, brother! Most Scarterrans are lucky to have a ready supply of goats milks or cow's milk so they can't be picky.   Goats' milk is naturally homogenized so the fat particles are evenly distributed but with cows' milk, that's different. With cows' milk, the cream rises to the top!"

"To make ice cream and make it well, you need four main ingredients. Ice, cream or whole milk, some kind of sweetener and some kind of fruit.   Nothing says you can't use naturally occuring ice but its hard to find fresh cream and fresh fruit in the middle of winter so off-winter ice is the norm.   In some places, this leads to seasonal recipes. Fumayan humans serve what they call 'Apple Snow' during their Fall Hay Day festivals. It involves off-winter ice supplied by the Fumayan Wizard's Guild, apples, honey, and if available a bit of cinnamon. Apples are not that expensive but the rest of the ingredients are and this is pretty normal for any variation of ice cream in other lands.
  In Swynfaredia, off-winter ice is relatively plentiful, but fresh fruit and cream less so. Swynfaredians like to use berries as their fruit source. Since everything in Swynfaredia has to be dragon theme they call it 'Icy Breath of the Essence Berries', which doesn't exactly role off the tongue. It's even harder to say in Draconic.   The Icy Breath of the Essence of Berries is commonly served at Midsummer's Night festivals. At the very least, this is a time of year where fresh cream is fairly plentiful. The Swynfaredian Dragonbloods will use it showcase their generosity to the peasants but even then they sell it at steep discounts rather than distribute it for free. I can sort of see the rationale. If the peasants have a small buy-in they won't waste this precious treat.   In the land of Kantoc, it's a tradition to serve ice cream made with natural ice for any highborn lord or lady with a winter birthday. This means they are stuck using jellied or alchemical preserved fruit rather than whatever fresh but it at least lets the Birthday Boy or Birthday Girl pick their favorite fruit. Kantoca are equally likely to use maple syrup instead of or in addition to honey. In any event, Kantoca highborn seldom share their ice cream with the peasants."

"There is no creation or innovation on the face of Scarterra that elves don't claim that their ancient ancestors did first.   I can't speak for ancient elves but I have served in the kitchens of all three modern elf nations. The three nations don't have a lot in common anymore but they all love cheese, and they don't have a lot of pasture land, so they don't keep as many cows or goats as other Scarterrans. That means any bit of milk or cream they do get their hands on is going to be made into cheeses.
  As much as I want to credit to gnomes for this culinary innovation, I'm pretty sure ice cream is something humans came up with first. Legend has it that a human wizard in the now lost Kingdom of Gerlaria had the idea first. The wizard was out of favor with the king and he knew his king liked eating fresh fruit and cream and had the wizard idea of serving it chilled which immediately got him back in the king's good graces.   The fact that Gelaria's spiritual heirs, the Kantoca, eat more ice cream than anyone else suggests this legend is likely true as much as any legend ever is."

Trade & Market

A small bowl of ice cream costs 2-3 copper pieces which doesn't sound like much, but in Scarterra, a single copper can buy more than you think. A single copper piece can buy a hot meal with bread, meat, a bit of vegetables and a side of a ale.   Even among wealthy Scarterrans who have ready supplies of magically generated ice at their disposal, ice cream is a celebratory sometimes food often associated with festivals and celebrations.

Storage

Scarterrans may be able to use off-winter ice to make ice cream but off-winter ice is too hard to make and store and it doesn't get cold enough to store ice cream long term.   Ice cream in Scarterra is intended to be consumed fairly quickly after it's manufactured.
